About this Course

Collard greens are closely related to kale, grow well in our climate, and alongside with okra, are among the most essential food items of all Afro-diasporic cuisines, and various cuisines around the world. Join us for this incredible workshop hosted in partnership with Iye Creative where we learn about collard greens from seed to spoon. We'll start the day by meeting at Crystal Pool to board the recreation bus, where we'll drive to visit the Royal Roads Giving Garden to plant and harvest some collard greens. Then we'll hop aboard the bus again for a quick trip to a local community kitchen, where we will learn to cook our freshly harvested collards with the amazing Chef Natalie Justin of Stir It Up! A great opportunity to connect with other food & garden enthusiasts, and (re-)connect with a plant that is easy to grow and harvest from year-round.
